The Only Casserole Recipe You'll Ever Need

Cooking Up A Storm is one of the greatest cookbooks in my collection.

I remembered this recipe the other day because I found an amazing deal on pasta at our local Bi-Lo. They had their Mueller's pasta on sale for $1.00 a box. I then went to Mueller's website and printed off a bunch of $1.00 off coupons. By the time it was all said and done, I think I purchased about 38 boxes of pasta for about $10.00 (had to pay the sales tax) and 38 coupons. My pantry is stocked full of what will probably be a year's supply of pasta for us (yeah, my part Italian hubby doesn't like pasta that much...).

The basic idea behind the "Only Casserole Recipe" is that you can take a base (noodles or rice), combine one can of drained veggies, one pound of meat, and a sauce....mix it all up, put a topping on it (cheese or bread crumbs) and bake it at 350 degrees for twenty minutes. The possibilities are endless.....(tuna, noodles, cream of cheese soup, and peas) or (hamburger meat, cream of mushroom soup, rice or hashbrown potatoes, and sliced mushrooms).....See where I'm going with this?

Last night, I decided to try out a new recipe on Ryan and it went over fabulously!

I preheated my oven to 350 degrees. I cooked one box of macaroni shaped pasta according to the box. I drained it well and poured it into a casserole dish. Then I added one can of Rotel diced tomatoes and peppers, one large can of chunk chicken, 1/3 of a bottle of Alfredo sauce, and one small carton of heavy cream. I stirred it all together and seasoned it with salt and pepper. I topped it with mozzerella cheese and a few dashes of hot sauce. I baked it for the called for twenty minutes and it was absolutely yummy!!!

Maybe I'm onto something with all this pasta!
