A Couple of New Recipes

During the summer, I'm always looking for great dinner ideas that aren't too much of a fuss. Hey, we're a busy family this time of the year! Since we had so much going on this weekend around the house, I decided to keep it simple....

For lunch on Saturday I made a cold pasta salad and let it chill in the fridge while Caleb napped....

I diced up some red bell pepper, cucumber and tomatoes and mixed it up with some Italian salad dressing and (cooked, rinsed, and cooled) pasta...Super easy, but really yummy!

Mix it all up and let it sit....
The longer it marinates, the better it tastes!

Dinner on Saturday night was super simple too....
I took the rest of my red bell peppers, chopped some onions, and added a few sundried tomatoes to diced chicken. I added a little white wine to the mixture and baked it.  I let it cook in the oven for about 45 minutes on 350 degrees. I poured it over some rice and it was awesome!
