Mustard Potato Salad

In my family we love mustard. Seriously. We could eat it straight! Store bought potato salad never cuts it in our house, so here's our recipe:

Take 4 to 5 large potatoes, peel and dice them. I then boil them in water until tender. Drain them and put them in a large mixing bowl. I add about two large spoonfuls of mayo and several globs of mustard. I add diced pickles and sliced green olives with pimentoes. Mix it all up! Keep adding mustard until it tastes tart and completely yummy!
