Tilapia and Grits

I experimented with a new recipe this week and it turned out to be really good....

I had some tilapia fillets that I wanted to use, but I have been so worn out from work lately. So I made up something random and quick...

I used 1/2 cup of freshly grated parmesean cheese, 1 tablespoon of dried parsley flakes, 1 tablespoon of paprika, and a little sea salt to taste. I mixed it all on a little plate so I could coat the fish. I preheated the oven to 400 degrees and rinsed my fish. I dried the fillets and pressed them into my mixture. I lined a baking sheets with aluminum foil and sprayed it with non stick spray. I baked the fish for about 15 minutes, until it was white and flakey. 

While my fish was baking, I made some extra cheesy grits. I brought 5 cups of milk to boil on medium-high heat. I added one cup of quick cooking grits and half a stick of butter. I then added a whole block of shredded cheese. I cooked it until it thickened and it was delicious!

I put my fish on the cheese grits and it was soooo good!
