Amazing Poppyseed Chicken Casserole

I found a recipe for poppyseed chicken casserole this past weekend, but I didn't have all the ingredients it called for. I decided to play around in the kitchen and actually came out with the creamiest Poppyseed Chicken Casserole I have ever eaten. I thought I'd share it with you today.

I shredded a pound of just baked chicken and added half a block of cream cheese. Normally the recipe calls for sour cream and I didn't have any. But the cream cheese was perfect in its place!

I added a large can of cream of chicken soup and three tablespoons of poppyseeds.

Then I crumbled up a whole sleeve of Ritz crackers and sprinkled them across the top. 
Spread it into a large casserole dish. 

Throw it in a 350 degree preheated oven for 30 minutes and enjoy!

This stuff is soooo good! It's quick and easy, a great way to use leftover chicken, and your family will love it!

This recipe will generously serve 6, with only 327 calories per serving. 

1 pound baked chicken, shredded
1 large can cream of chicken soup
1/2 package of reduced fat cream cheese
3 tablespoons of poppyseeds
1 sleeve of Whole Wheat Ritz Crackers



  1. I'm reading this recipe thinking...well surely she is going to make this some kind of law fat. I was thrilled to find the calorie count just right for dinner. Even my Hubs won't turn his nose up at this one. YUM!

    1. Sometimes I crave some comfort food! This one is amazing, but doesn't kill my weight loss efforts!
