Still eating clean around here. Life has been fairly hectic this week so we've gotten fairly creative. One evening I just plain craved an omelet. It's easy enough to throw something delicious together!
Eggs, mushrooms, onion, bell pepper, and natural cheese.
You can use egg whites instead of the whole eggs, if you wanna.
I like to saute my veggies before cooking the omelets. If you don't make pretty omelets, you can always scramble it all together. Still tastes the same!
And since I really do not make pretty omelets, you don't get to see that picture.... I was actually too busy trying to get it cooked that I didn't take a picture. But just imagine it was really good.
If it helps, you can imagine that it looked like a true chef made it.
I think that would be more than acceptable!
