Crockpot Pineapple Chicken

Mondays are always hectic around our home. Throw a Zumba class on top of that, I'm not ready to cook as soon as I get home. You can still eat clean and use your crockpot! 

Before work, I tossed in some frozen chicken breasts (five large ones) and two cans of pineapple chunks with their sugar free juice. The only ingredients in the can are pineapples and juice. 



Sprinkle with cinnamon and set on low. 


Throw it over some brown rice and you're good to go! 
I serve this with a side salad and it's really good. 
You could also skip the rice and throw it over a bigger salad. 

It takes just a couple of minutes to throw together and you've got a delicious, healthy meal that everyone enjoys!

  1. GREAT idea! Thanks! :) I think some sauteed onions tossed in would be great, too. Maybe some bell peppers to mimic sweet n sour chicken....

  3. Oh Yum! I have some fresh pineapple in the fridge -- and some chicken breasts in the freezer. I recently found out that Walmart will core a fresh pineapple for you for the price - about $1.99 for a whole one, that they core free vs. $4 or $5 for a cored one you find in the produce section. I was so surprised to find this out I share it whenever the topic of pineapple comes up.

  12. You could try adding some paprika instead of cinnamon and a little Dijon mustard to change the taste(don't know if Dijon mustard is clean though). Paprika gives it a very different taste to balance all the sweet from the pineapple.
