Mondays are always hectic around our home. Throw a Zumba class on top of that, I'm not ready to cook as soon as I get home. You can still eat clean and use your crockpot!
Before work, I tossed in some frozen chicken breasts (five large ones) and two cans of pineapple chunks with their sugar free juice. The only ingredients in the can are pineapples and juice.
Sprinkle with cinnamon and set on low.
Throw it over some brown rice and you're good to go!
I serve this with a side salad and it's really good.
You could also skip the rice and throw it over a bigger salad.
It takes just a couple of minutes to throw together and you've got a delicious, healthy meal that everyone enjoys!
