Veggie Frittata

I've got a super easy, crowd pleasin', clean eatin' recipe for you today! 


On really busy nights I need something that's quick and easy for dinner. 

I chopped two small tomatoes, one can of black olives (drained), and three large handfulls of spinach. 
I sauteed them with a little olive oil and one clove of finely diced garlic. 


I whisked 14 eggs together and poured them over my veggies. 
I added about two cups of shredded, natural mozzarella cheese as well. 


I covered my large skillet and stuck it in the oven on High for about 15 minutes. 
You must watch it closely! 
It will get puffy and brown on top. 
When you shake it, it will not jiggle. 


When it's done, it will look like this: 


You can stick a knife into it and if it comes out clean, you're ready to slice it and eat! 


It actually comes out really pretty! 


All three kids ate a large slice and my husband scarfed down three!
It's got a lot of protein and lots of veggies, but it doesn't taste overly "healthy". 

So....

Eggs : $1.89
Tomatoes: Free from my mother in law
Cheese: $1.43
Black Olives: $.89
Spinach: $.59 (I used less than half a bag)

That is $4.80 to feed my family of 5. 
That's my husband, myself, two preteens, and one almost 4 year old for $.96 per person. 
We all walked away stuffed and one piece leftover for breakfast.
