What I'm Eating

What a crazy week, y'all! I'm right in the middle of our annual boat show and through all of that I was snowed out of my house for almost three days! 

I shared my progress on Wednesday and it seems like just about everyone wants to know more about what I'm eating. Since this week is so nuts, I'll give you exactly what I ate for each meal and then next week I'll dig into the why. Fair enough? 

Monday and Tuesday:

Breakfast - Oatmeal with diced mango
Lunch - Turkey or chicken, brown rice, salad, and an apple
Dinner - Chicken or tilapia, quinoa, and broccoli or cauliflower
Two Snacks : Apple or Mango


Wednesday and Thursday: 

Breakfast : Eggs with spinach and mushrooms
Lunch: Tuna or chicken with a salad
Dinner: Baked salmon with broccoli, cauliflower, and a salad. (I fixed boiled okra with mine too)
Snacks: Hard boiled eggs or 6 ounces of baked chicken. 

Friday, Saturday, and Sunday:

Breakfast: Egg frittata with two slices of turkey bacon
Lunch: Tuna, chicken or almonds over salad with fresh berries. 
Dinner: Chicken, turkey, or shrimp, sweet potato, and steamed veggies. 
Snacks: Two sliced of turkey bacon or small hand full of nuts. 

I am eating unlimited veggies listed if I find myself hungry. 

I'm eating every two to three hours to keep my metabolism up and burning calories!

  2. Sounds good! I need to get into the habit of snacking a bit more and eating sooner in the morning. Sometimes things just get so busy, but that is one of my new goals!

  3. What you have been eating sounds very healthy to me also no expert. One question a boat show and snow just don't seem to go together.

    1. Yeah, those two things don't normally go together. But we just had the best boat show in years! Who knew?!?

  4. Wow, you are awesome. I create a monthly meal plan for my family, but have never thought to make a daily meal plan for myself. That would definitely help me to resist the temptation of snacking on empty calories!

    I like idea of snacking on a hardboiled egg; this week I'll have to keep some of those in the fridge ready to go! Thanks for sharing :)

  6. Wow that's so good, I love the idea of eating the same things two days in a row to make it easier for preparing and planning. I'm stealing this idea girl!

    Also congrats on all the boat sales this week, you rock!

  7. I think I'm going to give this a try. Just wondering what you use to cook the chicken or turkey. Also do you use any salad dressings? Thanks!

    1. We bake or grill ours. It's really good grilled. I sometimes throw it in the crockpot with some herbs to season it. Just whatever I have on hand.

      I sometimes use organic salad dressings without dairy. Aldi has an organic oil and vinegar dressing that is really good! I use just a tiny amount for flavoring. A little goes a long way!
