I've had a few requests about what I eat every day. I'll be the first to admit that I don't stress about it unless I'm getting really close to another goal mark. Most of the time, it's all "whatever". If I gain a bit, I'll go back into prepping and clean mode.
Does that make sense?
After the whole antibiotic thing, I've concentrated more on what I'm putting into my body. I've been more mindful about adding pictures to Instagram (find me as mrsdelsignore) to show more of what I eat through the week.
So.... I'm going to try to add more things over there. If you're curious about what I'm stuffing in my face, follow along.
For now, I'll catch you up here with some of my summer favorites...
I'm crazy about fruit salad. I basically grab anything I'm lovin' at ALDI for the week and chop it up. I make a huge container and eat on it all week. The whole family loves it. Ryan and Caleb top whole grain waffles with it instead of syrup and butter. Angel food cake is also really good with this on top.
I prep a lot of veggies for salads through the week. I think I stay on track much better when everything is right there ready to use. I use the peppers in salads, scrambled with eggs, and on top of grilled fish.
My latest obsession is watermelon right now. Between that and pineapple, I'm a happy girl. I tried feta cheese and mint on top of my watermelon this week and it was pretty good. I will eat feta cheese on anything! (It's excellent on top of sliced tomatoes too....)
I scrambled some egg whites with some black olives, garlic, and diced jalapeno. It was probably my favorite meal all week!
When I was feeling sick, I completely splurged on one of my comfort meals.... Loaded Baked Potato Soup. This is probably as far from "clean", healthy and low fat/calorie/sodium as you can get. But in all honesty, I did not care! It was amazing. And what is all this hard work for if I can't enjoy life?!?
Many on Facebook asked for a recipe. If you're trying to stay on track with weight loss, look away now...
1) Take three cans of diced potatoes and add milk to your pot. I kinda eyeball it. There's probably an inch of milk above the potatoes.
2) Add half a stick of butter and bring to a boil.
3) Remove from heat as soon as it starts to boil and add two packages of loaded baked potato instant mashed potato packs. Stir!
4) Top with shredded cheddar and bacon.
Clearly one of my unhealthiest recipes.... But it was worth it!
Treats and splurges are just fine in moderation. As long as you jump right back on track, you'll be just fine. It's gonna happen and it's completely normal!
I'm crazy for scrambled eggs topped with hot sauce. It's one of my favorite breakfasts.
