Eat Clean on a Budget Menu and Shopping List

This is my shopping list for the week. I'm eating clean and following the format of the Fast Metabolism Diet. I've kinda tweaked it to fit our lifestyle right now. I didn't put amounts next to anything because you can tailor those to your own family.

We make a little extra each meal to have for lunches the next day. When you're buying produce make sure you take into account how many meals you're using them in each day. I purchased a whole bag of sweet potatoes for the week. I normally use four avocados a week, several bags of mixed lettuce, and 3 to 4 dozen eggs. Just tailor this to your own needs! 

Breakfasts : I eat oatmeal and berries on Mondays and Tuesdays.  The rest of the week I eat eggs with veggies. 

Snacks : Boiled eggs (quick and easy!), raisins and apples. I do take watermelon to work some weeks. 

Lunches : Leftovers and a salad loaded with veggies. 

Recipes? 

Monday - Throw chicken breasts in a bag, squeeze in lemon juice (I use four), and add pepper. Let marinade in the fridge overnight. The next day, throw in the crockpot on low....grill it.....or bake it! Cook rice and okra as desired. 

Tuesday - Add chicken pieces, sliced pineapple, and cinnamon to the crockpot and cook on low all day. You can also pull this off in the oven or on the grill. 

Wednesday - Ryan smokes the ribs for me. You can look up an easy recipe on Pinterest. 

Thursday - Place carrots and chopped cabbage in the crockpot, place corned beef brisket on top. Cook on low all day. 

Friday - Place pork tenderloin in a dish or in the crockpot. Squeeze juice from five oranges over it and place oranges in with the meat. Cook on low or in the oven until done. 

Saturday - Cook mussels according to package directions. Serve with brown rice and steamed broccoli or a side salad. 

Sunday - We grill our tilapia and it's great baked as well. We season it with lemon and pepper sometimes or use pepper flakes. Serve with baked sweet potatoes and green beans. 

We spent around $100.00 after tax for everything. I bought a few items for Ryan and Caleb and some basic toiletry items as well, but did not include those in this figure. I purchased almost everything from ALDI, but they did not have okra. I got it from our local produce stand.

  8. Tilapia is super bad for you :/ it's loaded with mercury. I'm sure any white fish will do as a substitute?
