Waiting for Spring

When I asked what you'd like to see more on the blog, I really didn't expect that you wanted to see more family stuff. I guess I never really asked y'all what you wanted to see... I'm open for suggestions. Would you be interested in a "Day In The Life" type post? You tell me 'cause I'm an open book.

Since Caleb had pneumonia before Christmas, we have been super careful with him. We really haven't gone out a whole lot. We were told that he could easily get pneumonia again for the first three to four months after he had it. I'd much rather not risk things! The problem? Caleb loves to go, go, go!

We got him three little goldfish for his room. We named the orange and white one Tennessee, the spotted one Callie/Lucy, and the last one Phat. Caleb named her.... He said, "She's kinda fat, so we're gonna call her Phat." But Phat isn't actually fat....she's pregnant. So now we have Phat, the pregnant goldfish. But there's no such thing as a pregnant goldfish.... You can Google that one on your own. #notgoingthere

Caleb is hooked on Star Wars! I finally have someone to share it with because Ryan is convinced he doesn't like Star Wars. He actually hasn't give himself the chance to like it until recently. We watched the second movie last night and I can tell he's slowly beginning to like it too!

I am still actively trying to not wear yoga pants every single day of my life. The struggle is real, y'all. Technically leggings are not yoga pants and I have branched out just a bit.

I'm on a spring cleaning kick lately. No place is off limits, including where I work. I have mopped more floors this week than I ever cared to, but it is a fabulous workout!

This whole waiting for warmer weather thing is driving us all crazy....

Homemade Banana Bread... Two Ways

Saturday mornings normally inspire the baker within me. I love cooking a large breakfast for my family when I have the time to enjoy it. It's not uncommon for me to get so wrapped up in baking that I easily spend hours in the kitchen on Saturday mornings. 

I enjoy making bread, but I usually stick to recipes that I know are tried and true. Then I spin variations on them. Banana bread is normally my go-to bread. It's simple, has plenty of flavor, and is  a favorite for many. 

For some reason people are afraid to get in the kitchen and bake. The idea of bread, measuring out ingredients, and getting everything right is intimidating. I'll show you step by step....First I will show you my regular recipe and then we'll talk about healthier options.

I start out with three to four ripe bananas in my stand mixer. 

Add 1/3 cup of melted butter and mix with your bananas. It's gonna look just like this....

Then add one egg, 3/4 cup of sugar, and 1 teaspoon of vanilla. Mix it together.

Add in 1 teaspoon of baking soda, a pinch of salt, and a teaspoon of cinnamon. Slowly add 1.5 cups of flour a little at a time. Your batter will look just like this....

I added a half a cup of chocolate chips and gently folded them in with a spatula. This is a great time to add your own flavor to your bread. Instead of chocolate chips, you could add raisins. Dried cranberries are really good too. Chopped pecans or walnuts can also be used.

Pour your batter into a loaf pan. Stick in a preheated oven at 350 degrees and bake for one hour or until a knife in the center comes out clean. Cool and enjoy!

So... How can we make this healthier? 

You can use this recipe:

Mix two large eggs, 1/2 cup of honey, 3/4 cup of unsweetened applesauce, and 1 teaspoon of vanilla together. In a separate bowl combine 1.5 cups of wheat flour, a pinch of salt, 3/4 teaspoon of baking soda, one teaspoon of baking powder and one teaspoon of cinnamon together. Slowly add your dry ingredients to your wet ingredients. Add in the bananas and any add-ins and mix until smooth batter forms. Pour batter into two loaf pans. Bake in a pre-heated 350 degree oven for an hour as listed above.

A New Direction

This week I have been preparing for changes. I've spent a lot of time reflecting about my little blog and the direction I'd like to see it take. But, I also feel torn. I'm so much more than someone who has lost a bunch of weight and teaches Zumba. Sometimes I feel like that's all there is to talk about here and I suppose that's okay. But I'd like to see some more depth to it, you know?

That's why I would really appreciate you taking a moment to tell me exactly what you want to see here. Or maybe what you don't. I'm open to suggestions and thoughts because my heart has this huge need to help you! I need to know what I can do to help teach, inspire, and motivate you.

It's in the early stages, but Ryan and I have decided it's time for a spin off. Daily Dose of Del Signore has been my outlet for over five years. It's my baby. But, let's be honest... It has turned into a weight loss/fitness/health blog. I absolutely love and adore it. Like I mentioned earlier, there's so much more to me. I have recipes that aren't necessarily going to help anyone lose weight, but I want to share them. I have projects I want to work on that aren't fitness related, but I want to share them. Ryan, Caleb and I are planning some major life changes this year and I don't want to bog down a site that is devoted to health and fitness. But I want to continue to share our lives with those of you who are interested. Ryan is ready to step up and talk a little more too. We have hobbies and projects we share together and we'd like to talk more about those.

So.... What do you think about things changing a bit here and another blog coming soon for everything else?

Kayaking and Islands

This weekend we got a chance to test out Ryan's new kayak. Ryan and I have wanted to tour the old town of Harrison for quite a while. We heard there were remnants of the old homes on the islands across from the marina before TVA flooded the area in 1940 after the Chickamauga Dam was built.

The old highway once ran through the town and can be found on the islands.

Caleb was so excited to go on an adventure! We saw plenty of raccoon and deer tracks. But I am pretty sure his favorite part was playing in all the mud! Luckily we had our rain boots on.

We found old bricks that were possibly parts of old chimneys. We found a really old hinge as well.

I thought this driftwood was so pretty.

We ended up having a lot of fun with the kayak, little boat, and the islands. We are ready to go back and find some more stuff.

Low Calorie Pizza Stew

Sometimes I get in the kitchen and throw meals together. Sometimes things just don't have a name until we eat them and my boys come up with the idea. This is just one of those recipes.

Our week nights are often busy so if I can throw dinner in the crockpot and have a warm meal ready when we walk in, life is pretty dang good.

The best thing about this recipe? It's budget friendly and fits my macros!

It really doesn't get any easier.... Throw all of your ingredients in the crockpot (minus the quinoa/rice blend and parmesan cheese). Cook on low for 8 hours.

This marinara sauce is fabulous! I did dress mine up with a tablespoon of oregano and a teapoon of powdered garlic.

Before serving, cook your Spanish quinoa and rice according to the package directions. Serve it in bowls with your chicken on top. Sprinkle some parmesan cheese and you're good to go! It tastes like pizza casserole, but without all the calories! You can add in black olives and top with some mozzarella cheese if you've got some calories to spare.
