Low Calorie Pizza Stew

Sometimes I get in the kitchen and throw meals together. Sometimes things just don't have a name until we eat them and my boys come up with the idea. This is just one of those recipes.

Our week nights are often busy so if I can throw dinner in the crockpot and have a warm meal ready when we walk in, life is pretty dang good.

The best thing about this recipe? It's budget friendly and fits my macros!

It really doesn't get any easier.... Throw all of your ingredients in the crockpot (minus the quinoa/rice blend and parmesan cheese). Cook on low for 8 hours.

This marinara sauce is fabulous! I did dress mine up with a tablespoon of oregano and a teapoon of powdered garlic.

Before serving, cook your Spanish quinoa and rice according to the package directions. Serve it in bowls with your chicken on top. Sprinkle some parmesan cheese and you're good to go! It tastes like pizza casserole, but without all the calories! You can add in black olives and top with some mozzarella cheese if you've got some calories to spare.

  1. That looks yummy! I bet it would be good served on top of steamed shredded broccoli. Kind of like a chicken parmesan :)
