Healthier Million Dollar Casserole

I found a delicious looking recipe on Pinterest a few weeks ago. I've been on a freezer meal/food prepping kick lately. I found a recipe for a Million Dollar Casserole. The ingredients were full fat and used ground beef. I wanted to trim up the meal for my family and I am sharing my healthier version with you today!

Million Dollar Casserole

1 lb shredded chicken
26 oz organic spaghetti sauce
8 oz Neufchatel cheese
1/4 cup light sour cream
8 oz ricotta, part skim
2 tablespoon butter
16 oz gluten free pasta
8 oz light mozzarella

Cook your chicken, shred it, and set it aside. I cooked a big batch of chicken earlier in the day to use for other meals, so I had plenty! 

Cook your pasta. I used ALDI brand gluten free pasta. Once your pasta is cooked, drain it well. 

While your pasta is cooking combine your ricotta, sour cream, and Neufchatel cheese.

I put 1/4 of the pasta in the bottom of the pan and topped it with the mixture. Spread it all evenly.

Add another layer of pasta, top with your shredded chicken and butter, and smother it with pasta sauce.

Throw some shredded mozzarella cheese on top and you can freeze it. I made two round pans of this.

You can bake it at 350 degrees for 45 minutes or you can freeze them. When it's time to cook it, make sure you thaw it and cook it at 350 degrees for 45 minutes. You may want to add a little more sauce before cooking it to keep it from drying out. 

If you made the regular version of this recipe with the ground beef and full fat ingredients, you would consume 789 calories per serving. If you lighten it up with my version, you have a delicious meal for 557 calories per serving. And here's the nutritional information.....
