Grain Free, Sugar Free Pumpkin Pie Bake

Pumpkin pie for breakfast??? What? I have not lost my mind! What if I told you that you could eat a healthier version of pumpkin pie? How about grain free, sugar free pumpkin pie?

I was craving something warm for breakfast, so I jumped into the kitchen to try this out. I am enamored with things baked in mugs right now. Caleb eats breakfast at school now and sometimes Ryan just doesn't want anything. I don't feel like baking something big just for me. 

I actually made this in a bowl and it took maybe five minutes to assemble and cooks in the microwave. 

Grain Free, Sugar Free Pumpkin Pie Bake

1/2 cup of pure pumpkin puree (make sure it contains no added sugar)
1 egg
1 tablespoon of organic coconut oil
4 packets of Truvia or Stevia
1 teaspoon of pumpkin pie spice
Cinnamon to taste (I added a couple of dashes)
1/2 teaspoon of vanilla flavoring
1/2 teaspoon of baking powder
1 pinch of sea salt

Mix everything well in your bowl and the pop it in the microwave for 3 minutes. I topped mine with sugar free whipped cream and it was delicious!

The picture wasn't gorgeous, but I snapped it right before I devoured the whole thing! Sorry, not sorry. 


  1. I will have to share this with my sister, Pumpkin Pie is her absolute favorite. Of course if I show her this, she will be having it 3 meals a day, LOL
