While cooking the sausage and veggies, grate three cups of light cheddar cheese. Add about two cups of the cheese to a large mixing bowl and 8 ounces of Neufchatel or light cream cheese. Whisk two eggs and add them to your cheese mixture.
Once the veggies are tender, drain the mixture. Add the smoked sausage and veggies to the cheese. Mix together and spread in a glass baking dish. Top with the remaining cup of cheese. Put the casserole in a preheated 350 degree oven for 45 minutes.
Let sit for about 5 minutes when finished cooking. Enjoy!
You can add whatever veggies you have on hand. Mushrooms, squash, tomatoes, and broccoli would all taste great. Just experiment with it and find what works for your family. It's a great way to sneak in tons of veggies and still get the kids to eat it. Everything is better when you put cheese all over it, right?
Just make sure you lighten it up when you can so that you can enjoy it too!
It feels great to be back in the kitchen creating new healthier meals. I have really missed that. Between moving and being sick for so long, I had almost forgotten the joy that comes with cooking for my family. Almost like I forgot the feeling of being strong, successful, and losing weight. This week has been hectic, but I have made healthier meal choices and I am proud of that. I am seeing the difference in my clothes and on the scale again.
