Sugar Free, Gluten Free Chocolate Cake

Chocolate cake for breakfast??? Why not?? I mean, it's sugar free and gluten free. It has protein.... Yes, we can have cake for breakfast or as a snack without feeling guilty! Let me show you how....

  • 1 egg
  • 1 heaping Tb baking cocoa
  • 2 Tbs Oikos Triple Zero yogurt
  • 3 packets of Truvia
  • 1 tsp of almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla 
  • Pinch of sea salt
  • Water, as needed for consistency
Throw all of the ingredients in a bowl, mix well (you're looking for brownie batter consistency), and pop in the microwave for three minutes. I topped mine with sugar free whipped cream and then proceeded to eat it for breakfast. Because I can.....

From Drab to Fab

Good Monday morning!!!! If you follow me on Instagram {HERE} you already know what we tackled this weekend. We recently showed you our dining room reveal {HERE}, but what I didn't show you was the other side of the room. Our kitchen needed some work for sure, but we didn't plan on doing much right now. 

My husband promised me better lighting and then things got out of control.... Our football game was rained out on Saturday morning so we found ourselves with some extra time on our hands. My husband is extremely meticulous with projects and he wanted things done just right. 

Our kitchen had a ceiling fan in the middle of the room. The soffits really dated our kitchen and darkened the whole room. We had planned to add recessed lighting and remove the fan. As we stood in the kitchen talking and measuring for the lights, we both agreed that the soffits were coming down. 




I was there for pictures and moral support. I also carried out the old wood. 


Once we removed everything, I realized that the paneling and wallpaper were going to look pretty rough.



Then my OCD kicked in. Ryan began installing the lights and I decided the wallpaper was coming down. We are eventually going to hang drywall in all of the rooms, but paint is an easier, cheaper fix for now. We made the best of the paneling/wallpaper situation. I peeled wallpaper off and it didn't take long at all. It peeled right off since it was fairly old. 

I have not picked up a paint brush in months and it felt amazing to finally knock this project out. 







We will be adding trim to the top of the cabinets and crown molding, but for now it looks so  much better! I have also decided to add a cluster of lights to match our dining room lights over the kitchen sink. I think it will tie everything together. For the first time, I actually have space above our cabinets to decorate.

Blessed

Thank you to everyone that reached out to me on my last post {HERE}. I've tried to be open, honest, and real here. As always I am amazed by the love and support from so many people around me. You've celebrated with me during the weight loss, watched my little one grow up, and prayed for our family through the tough stuff. So, thank you. I appreciate every prayer, encouraging word, and cheer as we move forward. 

Our weekend was filled with a big project and football. Make sure to check back tomorrow for pictures of our project. I have a great new recipe to share this week as well. Don't forget to sign up for our accountability group beginning October 1st. There's still time to jump in! {HERE}

This kid had his first field trip last Friday. I was able to go with him and we had the best time! Seeing Caleb in his school environment brings so many emotions. He has settled in and his little personality is shining through. 


Caleb's behavior has shocked us all. He went from being a wild, rambunctious kid in preschool to near perfect behavior. We sure didn't see that coming! But he has an amazing teacher who really does fantastic with his personality. I also didn't realize he would be learning so much so quickly. I knew he had a great memory and was intelligent before school started, but the stuff he remembers now is just so surprising to me. He's actually reading some now. 

I dreaded the beginning of school for Caleb. He stayed in trouble so often in preschool. I worried how he would do sitting for so long during the day. I worried that he would hate school. Honestly I worried for nothing. Praise God!!!!

He's becoming this totally different kid right now and it's interesting to watch. He has older friends and is more aware of the little girls around him. He tries so hard to act older than he is and wants to fit in. Everything is football, video games, and building stuff. Until I saw him around a bunch of other kids his age, I truly didn't grasp how tall he's getting. Caleb has had some serious growth spurts going on.

I absolutely love this age! He's my little buddy and we get to actually have fun more. No more baby phase ( I am NOT a baby person.), no more fit pitching in public, and you can actually reason with him now. I am blessed to be his mama. I don't know how I deserve someone so precious, but I am glad he's mine.

The Word I Didn't Expect

Misdiagnosed.


That isn't the word you are expecting or possibly even wanting to hear when you are battling health issues for seven months. 

To learn that you pursued expensive treatments, suffered with extreme side effects, and wasted precious time with your family for something you don't even have.

You finally find a new specialist who you hope will be able to solve the mystery of why you're not actually getting better, only to find out that he's probably not going to be the one to treat you because what you have isn't what was diagnosed. To discover you haven't even dialed down the right kind of specialist.

Starting from scratch....again


I was referred to a second infectious disease doctor and my appointment was on Tuesday. I've been having more strange symptoms after being diagnosed with EBV and then adrenal crisis. I had so much hope in this doctor. Nine years ago, he treated my mom for Rocky Mountain Spotted Fever and actually saved her life. She had a severe case that landed her in the ICU, hooked up to a ventilator, and we were told to prepare ourselves to lose her. But this man was on the team of doctors that saved her.

I just knew he was going to be the one that turned my health issues around. I just had no idea it would be so literal.

My dad went with me and we talked to this doctor for quite a while. He asked questions that no one else had. He dug into my history (weight loss, fitness, family, surgeries) and tried to connect the dots. Then he told me something I wasn't expecting: I do not have chronic active Epstein Barr virus. He said my symptoms do not lead him to believe this is even viral at all and he probably won't be the one to treat me.

So we start from scratch. He is actually still trying to help me figure things out so I can take the next step. We did all new blood work and we are looking at everything.

I'm left waiting now. Waiting for more test results. While I'm waiting, I am growing more and more frustrated. I have spent thousands of dollars on things I did not need. I ended up in the emergency room in the worst pain of my life after the treatment was given to me incorrectly. I scared my husband, our kids, and my family. I've missed work. I've missed Zumba®. I was miserable on our vacation.

Pursuing something that did not exist for me. 

I don't even know how to process this right now. I am diving into coaching while trying to help other ladies not feel hopeless, jumping into Zumba® to soothe these raging feelings inside in a healthy way, praying that God will place the right people in my path during this time, spending time with my family trying to make up for the things I lost. I am grabbing at any ounce of joy I can find to keep myself from stomping my feet and pitching a fit.

How can we be so wrong for seven whole months? Why is my body betraying me so much? What if it's something simple that could have been fixed months ago? What if it's not simple at all?

Deep inside, I know God is teaching me something. I know He is guiding me through this. I trust that He will provide. I know I can use this whole jumbled up story to help others, but I'm not quite there yet. If you pray, will you be one of my prayer warriors now?

Do You Need Some Extra Help Losing Weight?

I admit this past week has been slower for weight loss. I believe my body is healing and I am doing some extensive reading and research. I also want to give you a health update. I admit I am still very overwhelmed and raw with the information I was given and I am trying to work through it myself.

When I first started my weight loss trial group at the beginning of the month, I gathered information from several different bloggers and Instagram trainers. I borrowed bits and pieces of things I knew would work for me. There's so much information out there and putting the best parts together is something I really enjoy. I follow so many inspirational people and they are doing amazing things!

Most approaches lead back to the same ideas/principles. Pound for pound the most forgiving and by far one of the most successful approaches right now is Trim Healthy Mama (THM). When I began working on new recipes and new ideas, many people commented about THM. Around the second week, I began digging through the information online and noticed it was very closely aligned to what we were working with. Many nutrition gurus are leading in the same direction, but I believe THM explains it much better. 

So I broke down and ordered the book.

One thing that really shocked me about the THM approach was the success women with thyroid failure, adrenal failure, and autoimmune issues were having. Many of those issues make weight loss so hard, but there are many women out there actually losing weight! I've been struggling with my health for so long that I am ready for a change!

Groundhogs and Sleepovers

I'm trying to catch up from the weekend! On Friday we hosted our first football player/buddy sleepover. Caleb has been begging to have his friends come over. It started out pretty wild. I picked the three boys up after school and took them to the house. They immediately ran to the backyard and started playing.

I opened our kitchen window looking out to the back yard and listened to the boys as I started dinner. All of a sudden, I heard all three of them screaming like someone was murdered. They ran into the house and were trying to catch their breath. One looked up and said, "There is an animal in the tree!"

I was thinking opossum....maybe a raccoon.... Nope. A big, chubby groundhog in the tree. Did you even know they climbed trees???? I had no idea...


This one was stuck in the tree and my husband pried him out of it. He scampered off to the woods and everything calmed down.

Caleb really enjoyed having his buddies over. There was plenty of Star Wars, Nerf guns, and Legos.


We ended up with all three boys going to bed by 9:30! I was amazed, but we did have early football games the next morning. Ryan and I sat on the patio and enjoyed a glass of red wine. He bought me this cup the week I had my IVIG treatment (you can read more about that HERE) and it reminds me that he loves me no matter what I'm going through. And it also happens to be the lyrics to one of my favorite Zumba® cool down songs.... 


Saturday morning we played an early football game and won! Caleb's team has really progressed this season and I am so excited for those boys!


That afternoon Ryan installed a ceiling fan in our room and it looks awesome. This is our first remote controlled light and fan, so Ryan was happy. We watched football, napped, sat on the patio and went to dinner. I think that's the first day we've actually relaxed in a while.


On Sunday I got to work with my husband. We work at the same company, but I'm usually in an office most of the day. We were a little short handed, so I pulled boats for him.


And this kid is finally settling into our new home/school/football schedule! I have spent weeks worrying/trying to fix things to make it easier on him. I honestly think he just handles it things fine on his own. But the mama side wants to make life just easier for him. I know he has to figure out things as he grows, but dang it's hard on both of us!

Low Carb Lasagna

My husband has Italian blood running through him (hence the last name...), but he isn't a fan of red sauce and pasta. What?!? I know...I am sad for me too. But then again, it's probably a good thing that I don't consume tons of pasta.

I look for ways to sneak in my love of lasagna while appealing to my whole family. Here's my low carb version. It takes no time to cook up a delicious meal that your whole family will enjoy. 


Simply drain your tomatoes, add one tablespoon of chopped garlic, a pinch of sea salt, and one teaspoon of oregano leaves to a pot. Simmer while you cook your hamburger meat in a pan. You can add mushrooms if you'd like. Once your hamburger meat is browned, drain it and rinse well. 


Layer your ricotta cheese or cottage cheese (low fat or full fat, your choice) in the bottom of an oven safe dish. Add hamburger and then tomato mixture. I alternated between the three until the meat and tomatoes were gone.


Sprinkle with a cup of mozzarella cheese and bake for 30 minutes in a 350 degree oven.


I let mine sit for about 5 minutes while I prepped a salad to go with it. You can use low fat versions of the cheeses if you'd like. It's delicious either way!

A Place For Everything

My house project "ban" has been lifted and it feels amazing! I shared our dining room progress {HERE} and we've knocked out another project as well. It must be something about the cooler weather giving us more energy to tackle things.

After we moved our garbage service changed. The company provided the can and it's a lot larger than our old ones. We didn't really have a great place to put it and it didn't fit between the two garage doors. I'm very OCD and it really needed its own spot. 

My husband decided to make a place. 


He measured the can and dug out a space beside our driveway. Then he built a form for the concrete, knocked in rebar, and strung wire throughout to give more stability.



When he poured the concrete, he shaped it to allow water to flow away from the house. When the drain pipe from the gutter flows, it still has a direct path leading away from the house. You can't really see the difference in the pictures, but it is there.


And now we have a place for the new garbage can. And my OCD heart is happy.... I really have a great husband who understands my need to have things in order!

Grain Free, Sugar Free Pumpkin Pie Bake

Pumpkin pie for breakfast??? What? I have not lost my mind! What if I told you that you could eat a healthier version of pumpkin pie? How about grain free, sugar free pumpkin pie?

I was craving something warm for breakfast, so I jumped into the kitchen to try this out. I am enamored with things baked in mugs right now. Caleb eats breakfast at school now and sometimes Ryan just doesn't want anything. I don't feel like baking something big just for me. 

I actually made this in a bowl and it took maybe five minutes to assemble and cooks in the microwave. 

Grain Free, Sugar Free Pumpkin Pie Bake

1/2 cup of pure pumpkin puree (make sure it contains no added sugar)
1 egg
1 tablespoon of organic coconut oil
4 packets of Truvia or Stevia
1 teaspoon of pumpkin pie spice
Cinnamon to taste (I added a couple of dashes)
1/2 teaspoon of vanilla flavoring
1/2 teaspoon of baking powder
1 pinch of sea salt

Mix everything well in your bowl and the pop it in the microwave for 3 minutes. I topped mine with sugar free whipped cream and it was delicious!


The picture wasn't gorgeous, but I snapped it right before I devoured the whole thing! Sorry, not sorry.

Progress Everywhere

Our weekend was packed with football and projects.... just how we like it! On Friday we worked on our dining room project. You can see the final reveal {HERE}!


Caleb and I were the official tool handers of the project and Ryan did the tougher stuff.



But we went to bed Friday night with a much brighter, happier looking dining room!


Saturday was our big football game. Caleb's team played against the toughest team in the league and won! I am so emotionally invested in these games and I'm sure I will have stomach ulcers by the end of the season. It's hard to describe the joy, hope, and pride all wrapped up in watching your little boy succeed on the field. Knowing he enjoys it and is becoming better with each practice and game is an unbelievable feeling. My husband asked me how I would be able to handle it when he was playing high school football. I'm not sure my emotions will survive....



You can just tell we are blessed with coaches who really care about these boys. I am impressed with the discipline of the team and the emphasis on safety. I have a wild, energetic little boy but when it's time to line up, he's right where he's supposed to be. It still shocks me every single time!


We are proud football parents and are loving this season!


Caleb passed out pretty early Saturday night. He played hard and crashed even harder. I can tell he's still not completely over the ear infection so he really needed the extra rest this weekend. Between school and football, he is really learning so much right now. He's starting to read (wow!!!) and his writing is improving. In just a few short weeks I have seen such a dramatic difference in this little boy. He's growing up faster than ever and I just cherish the little moments along the way. I'm so afraid he's growing up too quick. I just want him to stay little just a while longer, but then I get so excited at all of the new things he can do. It's a tough balance....


And finally, I can share some weight loss progress! When I had my EBV treatment on August 10th {HERE} I was 13 pounds heavier. In one month, I have lost 13 pounds! I feel like it has been such a battle, but it's something I can control. I can't control my health, but I can control my eating and response to everything going on. It feels pretty fabulous too!
