Spinach Artichoke Chicken

This meal tastes like it has a million calories, but I've lightened it up for you! With reduced fat cream cheese, fresh spinach, and delicious artichokes, you can build lots of flavor in a quick meal. This can be served over brown rice or pasta, but we ate it just as it was with veggie sides. No matter how you serve it, this meal is amazing!

  • 2 tablespoons olive oil
  • 8 skinless bone-in chicken thighs (or breast fillets)
  • 1 tablespoon minced garlic
  • 1 cup reduced fat cream cheese
  • 1 cup chicken stock
  • 1 can artichoke hearts in brine/water, drained and chopped
  • 1 can mushroom pieces
  • 4 cups loosely packed baby spinach leaves
  • Salt and pepper to season
  • 1/2 cup Parmesan cheese


  1. Preheat oven to 400°. Season chicken thighs with salt and pepper to taste. Add olive oil to Dutch oven; heat over medium-high heat. Add chicken, flesh-side down, and sear for 2 - 3 minutes on each side or until golden brown; drain any excess fat.
  2. Stir garlic in and heat through (about 1-2 minutes). Add in cream cheese and occasionally stir it until it begins to melt down and become thinner in consistency. Pour in the chicken broth and add the Parmesan cheese.
  3. Bring to the boil, reduce heat to low, cover and simmer until sauce thickens (about 5 minutes). Stir through artichokes, mushrooms, and spinach; simmer until the spinach has just started to wilt.
  4. Place the skillet into preheated oven and continue to roast for 15-20 minutes (or until completely cooked through).

One Pot Pasta

I've shared this recipe over on Instagram when I first got my Dutch oven from my parents. I was so excited to try it out and this meal was so easy. My guys loved this dish and it was so simple to throw together. The pasta gets cooked right in the pot and everything is just thrown all in the pot.

1 pound spaghetti
1 package smoked sausage, thinly sliced (I used some from an Amish community and it was amazing!)
1 large onion, thinly sliced
3 cups halved grape tomatoes
2 tablespoons of dried basil 
4 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
1 cup grated cheddar


In a large stockpot or Dutch oven over medium high heat, combine spaghetti, sausage, onion, tomatoes, basil, garlic and 4 1/2 cups water; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer, uncovered, until pasta is cooked through and liquid has reduced, about 8-10 minutes. Top with cheddar cheese. Serve immediately.

This meal is perfect for busy weeknights, picky eaters and hungry people! I promise the leftovers are even better the next day too.

Dresses and Ice Cream

Our weekend flew by way too quickly. My husband and I shared a first together... our behinds spent a Friday night sitting in fold out chairs watching our little boy in a talent show. Each grade performed a little song together between acts and we watched him sing. I think it was more fun to watch him hang out with his buddies in the audience and see how he interacted with all of them.

After the talent show we took Caleb out for ice cream. We had such a warm, beautiful Friday and I cannot wait for spring to be here. Sitting in the truck with the windows down just seemed like the right way to enjoy that kind of weather.

On Saturday I was able to be with one of my sweetest friends as she shopped for her wedding dress. I am one of her bridesmaids and I cannot wait to stand by her side as she marries her sweetheart. Luckily she found her dress and it is amazing on her.

While we were there, I got to try on a dress for the wedding too. Fortunately I love the colors she picked for the wedding and she has fabulous taste. I am so thankful for that! We may have joked back and forth about dress options for me, but I know that whatever she picks it will be beautiful. And I totally love dressing up.

All of this wedding planning lately has me itching to do my own planning. My ten year anniversary is coming up next year and I don't think it would be a terrible idea to do a vow renewal with my own sweetheart.

Break's Over

The blog got a pretty, little face lift this week and things are welcoming me back to this area that I have really grown to miss. I desperately needed a break to take care of my health issues and just life in general, but I missed writing. I took about a year off from blogging consistently and I am ready to jump back in a bit.

Yes, I still have migraines but they are much fewer and farther between. I have had maybe three since my surgery last September. I am so thankful every day for that!

Two of my very best friends and I founded a church fitness ministry at the beginning of this year and call it TriFit Dance and Toning. It is our passion, hobby, and inspiration. I feel like God is using us to do something fabulous for women and I am so humbled by this experience. I pray that He can use me to uplift them, encourage every path I cross, and bring Him glory in everything I do. I keep asking myself if this is truly real life because it is unbelievable. I get to workout with my friends, dance to awesome music, burn serious calories, and show women the love of Jesus week after week. I couldn't ask for more. My latest obsession has been decorating, crafting and cooking, y'all. My home projects are tying up all of my time and I'm honestly okay with that. My mom convinced me to get a Brother Scan n Cut for all of my projects and I have started learning how to use it. I admit I am totally intimidated and fortunately I have a great friend to help guide me. When I made my first monogram, I almost hyperventilated....and then I ordered more vinyl.

We are slowly getting our home just how we like it. We've worked on getting outside spaces beautiful and are slowly decorating the inside. I have had so much fun falling in love with each thing I add.

And some cute kid is starting baseball soon. It's so hard to believe that we're going to be living at the ball fields again soon. I am actually excited to see him play this year since he took a break last season.

Simple BBQ Chicken

Hey, y'all! If you've been following me on Instagram {HERE} you already know I received a Dutch oven as a gift this week. I've already made two delicious meals in it and have quickly fallen in love. I wanted to share my easy BBQ chicken recipe with all of you.

  • 2 pounds skinless boneless chicken breasts tenderloins
  • 1 tbsp olive oil
  • ½ onion, chopped
  • 2-3 garlic cloves, minced
  • 1½ cups of your favorite BBQ sauce
  • ½ cup chicken broth
  • 2 tsp salt
  • 2 tsp paprika
  • 2 tsp pepper


Heat your olive oil over medium heat and cook your onion and garlic until tender. Add your paprika, chicken broth, and chicken breast tenderloins and stir together. Allow mixture to come to a boil, add your BBQ sauce and reduce heat to a simmer. Cover with the lid. Cook for approximately 30 minutes or until chicken is cooked through, Remove lid and shred chicken. As you are shredding your chicken, the sauce will cook down and thicken.

You can enjoy this chicken on hamburger buns, just as it is, or wrapped in lettuce if you are trying to eat healthier. No matter how you enjoy it, this dish is amazing! Serve it with your favorite coleslaw recipe and baked beans and your family will think you worked on this all day.
