Light Chicken Alfredo Lasagna

I was craving lasagna...but I didn't want to completely kill my weight loss efforts for the weekend! 
I saw a chicken lasagna recipe that looked so good. I thought I would attempt to lighten it up quite a bit. 

I bought whole grain noodles, light alfredo sauce, and part skim cheeses. 


I cooked my noodles according to the package directions. I sprayed my tin with non-stick spray and started layering. I put down a row of noodles, topped it with the alfredo sauce, and then some ricotta cheese and a layer of mushrooms,sprinkled the mozzarella and cooked, shredded chicken. 
I was able to do three whole layers. 

I baked it for forty-five minutes in my preheated 350 degree oven. 
It came out looking amazing!




Ryan and Caleb ate tons of it! 

My serving (shown above) was about 300 calories. If you compare it to regular lasagna at 542 calories per serving, mine was a much better choice!

You cannot tell it has wheat noodles, nor can you tell anything is the "lighter" version. It has full flavor and totally satisfied my lasagna craving without killing my healthy eating! The texture was identical, so the only thing missing was all the calories.
