Skinny Stuffed Peppers

I've finally got a stuffed pepper recipe both of my guys will eat. 
Best part about it? 
It's the healthiest and easiest one I've ever made!


I used a pack of ground turkey. Just brown it like you do hamburger meat. I added a dash of garlic powder to mine. 

While the turkey is cooking, cut off the tops of your peppers. Dump all the seeds out and you're good to go. 


Once my turkey was cooked, I added about a cup of corn, a cup of chopped spinach, and one can of diced tomatoes with the juice. 


I put a little bit of shredded low fat cheese in the bottom of my peppers. 


Spoon all your veggies and meat into your peppers. 


And top with cheese!


I baked them in a 350 degree oven for about 50 minutes. 



My little guy loved it! I served our peppers with cornbread cakes and it was sooo good!


One pepper large pepper, stuffed is right at 303 calories for the whole thing. 
Ryan and I could only eat one each. They were so filling and delicious!
I've never been a fan of stuffed peppers and I was very skeptical about making this. 
I am so glad I tried it because it was really that good!

    They look delicious. I love bell peppers but have never been a big fan of stuffed peppers because I'm just not a big meat and rice eater. Every stuffed pepper I've ever had has been stuffed with hamburger and rice. These look much more pleasing.

  4. The turkey was surprisingly good this way. I think next time I would add more spinach and maybe some diced garlic. Black beans would be really good too.
